Here’s a super yummy and easy to make strawberry shortcake recipe!
6 cups strawberries, cleaned and sliced
1 1/2 cups sugar
2 cups flour
Pinch of salt
4 teaspoons baking powder
4 tablespoons cold butter
1 cup milk
Sweetened whipped cream
Preheat the oven to 450F. Toss the strawberries with 1 cup of the sugar, coating the strawberries well. Let sit.
In aanother bowl, mix the remaining half cup of sugar with the flour, salt, and baking powder. Cut the cold butter into small pieces, and using a fork or pastry blender, blending the butter into the dry ingredients well. All of the butter should be thoroughly blended.
Slowly add the milk to the bowl, stirring it in well to blend, until the mixture forms a ball. The mixture should be somewhat sticky. Use a little more or less milk if needed.
Drop one heaping tablespoon (one per cake) of the cake batter mixture onto an ungreased baking sheet. Bake about 10 minutes, or until golden brown. Keep an eye on them – once browning starts, it goes quickly. Let cool a few moments, then top with the strawberries and juice and the whipped cream or slice in half first, then top.
