1/2 cup unsalted butter, softened
3/4 cup flour
2 eggs, large
2 tbsps lemon zest
2 tbsps lemon juice
3/4 cup granulated sugar
1/4 teaspoon sea salt
For the lemon glaze:
4 tbsps lemon juice
8 tsps lemon zest
1 cup powered sugar
Preheat the oven to 350. Grease an 8×8 inch baking dish using butter and set aside. Zest and juice two lemons and set aside. In a mixing bowl, beat together the flour, sugar, salt, and softened butter. Mix well until combined.
In another bowl, mix together the eggs, lemon zest, and lemon juice. Blend together until well combined. Pour this into the first bowl of flour mixture and beat for two minutes at medium speed until the batter looks smooth and creamy.
Pour the batter into the baking dish and bake for 23-25 minutes. When done, it should turn golden around the edges.
When done, remove from the oven and allow to completely cool before adding the glaze.
For the glaze: Filter the powdered sugar and mix with lemon zest and juice. Spread the glaze over the lemon brownies with a spatula and allow the glaze to set.
Cut into bars and serve.
