Yummy Creamy Chicken Enchiladas Recipe

2-3 cups shredded chicken (about 4 chicken breasts)
1 clove minced garlic
1/4 tsp chili powder
1/4 tsp cumin
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 cup diced green chili
4 oz cream cheese softened
1 juiced lime
8 large flour tortillas
1 14 oz can green chile enchilada sauce
1/2- to 1 cup shredded pepperjack cheese
fresh chopped cilantro
In a medium size bowl, combine the shredded chicken together with the cream cheese, garlic, chili powder, cumin, kosher salt, black pepper, lime, and green chili. Stir and mix around together well until everything is nicely combined. Scoop 2-3 tablespoons onto each of the flour tortillas and then roll each of them up. Spread a little of the enchilada sauce on the bottom of a 9×13 baking dish and then put the rolled flour tortillas in. Pour the remainder of the enchilada sauce over the flour tortillas and top everything with shredded cheese. Cover with foil. Bake at 350 for 15 minutes. Remove foil and bake for 10 more minutes. Top with fresh cilantro when cooled slightly. Yummy!
