2 1/2 cups flour
1 TBSP cornstarch
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
2/3 cup milk
2/3 cup heavy cream
2 teaspoons vanilla extract
2 3/4 cups sugar
1 3/4 sticks unsalted butter, softened
1 1/3 cups fresh blueberries
Preheat your oven to 325 degrees. Mix together the flour, cornstarch, salt, and baking soda in a large bowl. set aside. In another bowl, mix together the milk, cream, and vanilla. Set aside.
Next, cream the sugar and butter together in the bowl of a stand mixer. Add the eggs in one at a time. Add the flour in, alternating with the milk mixture, on a low speed. Once everything has been added, run the mixer for an additional 20 seconds on low speed. Scrape down the sides and bottom of the bowl while mixing as needed to keep the cake batter blended well.
Coat a bundt pan with cooking spray and flour. Pour the cake batter evenly into the pan. Carefully fold in the blueberries after the cake batter is in the pan. Bake for 50-60 minutes or until golden brown and a toothpick inserted in the center comes out clean.
When done, remove from the oven and place the cake still in the bundt pan on a wire cooling rack for 5 minutes. After 5 minutes, place the wire rack on the top of the cake in the bundt pan. Flip the cake in the bundt pan and wire rack over and set it down. Give the cake a few seconds and then gently lift the pan off of the cake.
Before serving, dust with sifted powdered sugar.
