Watermelon Cake Yummy Recipe

Here’s a new twist on watermelon – a watermelon cake with coconut whipped cream. And it’s a super simple and yummy recipe!
Slivered almonds, toasted
Cocounut whipped cream (see recipe below)
Fruit of your choice
To create this appealing watermelon cake, simply remove the ends and the rinds from a watermelon. Then cut the watermelon into six wedges (or slices). Dip the ends of each slice or wedge into coconut whipped cream, then into the toasted slivered almonds. Reassemble the watermelon wedges on a plate or platter, and top with more coconut whipped cream, and then your favorite fruit.
Coconut Whipped Cream Recipe
Makes 2 cups.
1 can full-fat coconut milk
1 teaspoon pure vanilla extract
3 tablespoons powdered sugar
Chill the unopened can of coconut milk in the refrigerator overnight or for 8 hours. It must be firmly cold – trying to make this without this step will result in a big mess. When you’re ready to begin making the chocolate whipped cream, place your mixing bowl in the freezer for about 5 to 7 minutes to make it good and cold.
Flip the can of coconut milk upside down and open the bottom. Once the can is open, pour the liquid coconut milk into a container that you can put a top on to save it (for smoothies, etc.) and spoon the hardened firm coconut into the chilled mixing bowl.
Add the vanilla and the powered sugar, beating on high until the mixure of nice and fluffy – looking like whipped cream.
