Here’s a yummy recipe for chocolate scones, and not just any scones, but triple chocolate scones! Totally yummy!
2 cups flour
1/2 cup cocoa powder
1/3 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 cup cold butter
1 cup miniature chocolate chips
1 teaspoon vanilla extract
3/4 cup buttermilk
1/2 cup dark chocolate chips
1 teaspoon shortening
In a large bowl, blend together the flour, cocoa powder, brown sugar, baking powder, baking soda, salt, and cinnamon. Add the butter, blending it into the dry ingredients with a fork, until the mixture is coarse crumbs. Add in the miniature chocoolate chips and stir.
In another bowl, whisk the egg, vanilla, and buttermilk. Pour this into the first bowl, mixing and blending well until a dough forms.
Divide the dough into two parts. Place each part onto a baking sheet. Flour your hands to help prevent sticking, and shape each part into a six inch circle. Then cut each circle into six wedges.
Bake at 400 degrees for 18 minutes. Remove from the oven and allow cooling time.
Combine the dark chocolate chips and shortening in a microwave safe bowl. Heat for 30 seconds, stir and repeat until all is melted and smooth. Be careful not to over heat. Drizzle the melted chocolate mixture over the tops of the scones. One easy way to do this is to place the melted chocolate mixture into a plastic bag and cut one corner tip off.
Makes 12 chocolate scones.
