Sweet Chili Glazed Pork Tenderloin Medallions Recipe
1 tsp chili powder
1/2 tsp kosher salt
1/8 tsp black pepper
1 lb lean pork tenderloin, cut into thin circles
2 tsp cooking oil
1/4 cup natural apple cider
1 Tbsp real maple syrup
1 tsp apple cider vinegar
Mix together the chili powder, salt and pepper, then sprinkle evenly over the pork medallions. Put a large heavy skillet over medium-high heat and add the oil. When the oil starts to sizzle, add the pork and cook until lightly browned. Push the pork pieces to the edges of the skillet, then add the apple cider, maple syrup, and apple cider vinegar to the center of the skillet and stir to combine.
Reduce the heat to medium-low, push the pork back to the center of the skillet and stir to coat the pork with the sauce. Continue cooking, stirring the pork occasionally, until the sauce thickens into a glaze.
Serve pork immediately with plenty of the glaze spooned over the top.
May serve over a bed of greens or grains. Will serve 2 to 4.
