Soft and Crumbly Peanut Butter Cookies Recipe

This is a yummy chewy cookie that melts in your mouth. So easy to make that they could become addictive.
1 cube butter, softened
3/4 cup peanut butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla
3/4 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups flour
In mixing bowl, mix the butter, both of the sugars, and the peanut butter until light and fluffy. Add egg and vanilla, mix well. Add baking soda, salt and flour, mix well. Put in refrigerator for 15 minutes to chill.
Preheat oven to 350 degrees. Roll into 1 inch balls and place on baking sheet covered with parchment. Bake for 8-10 minutes. Cookies are done when the edges turn a light golden brown.
Note: The cookies do not spread much, so for a flatter cookie smash the cookie dough ball slightly when forming. Splenda or another sugar substitute works well in these cookies.
