1 lb oreo cookies
4 tablespoons butter, melted
3 8 oz packages cream cheese, softened
3/4 cup sugar
3/4 cup sour cream
2 teaspoons vanilla extract
1/2 tsp salt
3 large eggs
Preheat the oven to 325 degrees. Line a 9×13 baking dish with aluminum foil. Spray the aluminum foil with cooking spray.
Put 28 of the oreo cookie into a food processor. Pulse until they are ground into fine crumbs. Add the melted butter in with the cookie crumbs and stir until the cookie crumbs are moistened. Pour the oreo cookie crumb mixture into the 9×13 baking dish, then press firmly until the mixture is evenly distributed.
Bake for 10 minutes in the oven. Remove from oven and allow to cool while preparing the cheesecake mixture.
Beat the softened cream cheese and sugar in a large mixing for about two minutes until smooth. Add in the sour cream, vanilla, and salt. Beat to combine for 30 seconds. Scrape down the sides. Add in the eggs one at a time and beat well after each egg.
Break the remaining oreo cookies in half and place them in the food processor. Gently pulse them, leaving them still chunky. Stir them into the cheesecake mixture.
Pour the cheesecake batter onto the top of the oreo crust and spread it around evenly. Crumble four or five of the oreo cookies over the top of the cheesecake.
Bake for 40 minutes until the filling is set around the edges and the middle is a little wobbly. Chill for at least three hours, or overnight. Store in the refrigerator.
