2 slices rustic white bread or sourdough bread
1 Tbsp extra virgin olive oil
2 oz. Mozzarella cheese, shredded
1 oz. Feta cheese, crumbled
2 cups fresh spinach
2 Roma tomatoes, sliced
2 Tbsp diced black olives, diced
1 Tbsp red onion, finely chopped
2 tsp chopped fresh basil
1/4 tsp garlic, finely minced
Freshly ground black pepper
Saute the garlic and fresh spinach with 1 teaspoon of olive oil in a hot skillet. Saute until the spinach begins to have a wilted look, about 30 seconds or so. Remove the skillet from the heat. Stir in the fresh basil and set the skillet aside.
Begin assembling the grilled cheese sandwich by spread the mozzarella cheese and the feta cheese over on slice of the bread, building an even layer. Add the tomatoes in a single layer over the cheeses. Then spread the spinach and garlic mixture over the tomatoes. Add olives and the red onions next. Sprinkle fresh ground black pepper over all of this, and top with the other slice of bread.
Add 1 teaspoon of olive oil to the skillet, place the sandwich into the skillet, and heat over medium-low heat. Cook untilt he bottom of the sandwich reaches a golden brown color, about 3 to 4 minutes. Add another 1 teaspoon of olive oil to the skillet, and quickly but carefully flip the sandwich over. Cook about 2 to 3 minutes of until the bottom is a nice golden brown color.
Serve immediately. Makes 1 sandwich.
